One quart fresh whole strawberries
1 or 2 ripe bananas
1 Tbs. raw honey (or to taste)
1/4 c. water
2 Tbs. grass-fed powdered gelatin (I use Great Lakes)

- Cut the tops off of the strawberries and place them in a bowl. Add the peeled bananas.
- Mash the strawberries and bananas with your hands, just squeeze them tightly. I like the jello kinda chunky. (If you want it really smooth you could put the strawberries in a blender, or even juice them, but then you don't get the fiber, and you miss the whole food-ness of it.) Keep mashing until a good bit of juice has come out and the pieces are pretty small.
- Mix in a tablespoon or so of honey, depending on how sweet the strawberries are and how sweet you like it. I try to add as little sweetener as possible so that the strawberry flavor is not over-powered.
- In a small saucepan, sprinkle the gelatin over the 1/2c. water. Allow to sit for a couple of minutes until all of the powder is wet. Stir while heating gently until all of the gelatin is melted.
- Mix the gelatin water into the strawberries.
- Put the bowl in the fridge for a couple of hours, or the freezer for half an hour or so, until well-gelled.
